Chicken Saffron Noodles with Chardonnay

Saffron Chicken with Noodles - This dish takes only about 25 minutes from start to finish making it a great mid-week meal. The mustard gives it just a tiny bit of a kick and works beautifully with the nicely oaked Chardonnay. The soft nuttiness of the pine nuts and the slight hint of the same in the wine makes a nice bridge between the two. Although there is a nice fullness to the sauce, it is not so rich that it overpowers the wine. |
2005 Silver Rose Cellars D'argent Chardonnay, Napa Valley. The mouthfeel of this wine is pure satin; full and smooth with a great butteriness. There is a nice floral note in the nose amidst the fruit and great smoky nuttiness that brings about memories of roasting marshmellows on a cook fire. The fruit is pear and peach and some citrus in the finish. The big news on this wine is the great complexity and length of the finish as well as the balance. A very nicely made wine! |

Saffron Chicken with Noodles; Makes 4 servings |
4 chicken breasts
2 Tbsp Olive Oil
1 Tbsp butter
1/2 cup Chardonnay
1/8 tsp Saffron Threads
2 cloves garlic, finely chopped
2 Tbsp pine nuts
1 cup chicken stock |
1 bay leaf
1 Tbsp Butter
2 tsp flour
1/4 cup half and half
1 tsp dijon mustard
Salt & Pepper
12 oz egg noodles |

Start noodles cooking while preparing sauce. Salt and Pepper chicken breasts. Heat large skillet to medium high, add 2 Tbsp Olive Oil and heat, add chicken breasts. Brown on both sides, about 4 minutes each side. Remove chicken to plate. Add butter to pan and heat until melted and turn to heat to medium; add garlic and pine nuts to pan and cook until both are just lightly browned. Add wine and saffron to pan and simmer about 2 minutes. Add bay leaf and chicken stock and return to low boil, add chicken and cook until chicken is cooked through, about 10 minutes. Remove chicken to warm plate. Combine 1 Tbsp butter and flour until thoroughly mixed. Add to pan. Add half and half to pan. Cook until slightly thickened. Add mustard. Divide noodles between 4 plates and top with sauce and 1 chicken breast.
