Food Style Pairing Characteristics
Oily Fish All cooking styles, Dry Wine The waxy characteristic of the wine has enough body to work with the oily quality of the fish.
White Fish Grilled, barbequed Dry wine The lightness of the fish does not over power the wine and the cooking styles work well with the oak aged wine styles.
Shell Fish In a sauce or alone - Dry wine The body of the fish with its penchance toward minerality and citrus fruit works wells with shell fish.
Pasta Goat cheese sauce -Dry Wine The body of the wine is large enough to work with the cheese in the sauce.
Chicken Most cooking styles, even slightly spicy The chicken flavors with its fuller body make it a natural with Semillon. An off-dry version will cut the heat of spicy foods.
Fruit or Brown Sugar based Desserts Not too sweet dessert, Sweet wine The wonderful honey, baking spice, apricot and raisin quality of the sweet wines match beautifully with fruit or brown sugar desserts, like pie, grilled fruit topped with brown sugar or honey,or cookies.
Nuts Sweet Wine The nutty and toast flavors of an oak aged wine work well with toasted nuts.
Foie Gras Sweet Wine The body of the wine, along with the sweet flavors match the weight and flavors of the food.

Other Notes: The profiles of this wine are dependent on its style and age, as well as the container it was stored in. Young dry wines tend toward an almost grassy quality with citrus fruit and spice. Aged wines often demonstrate beeswax, apricots, dried figs, and an elegant aromatic quality. These wines also can take on more of the honey and lanolin qualities the varietal is known for. Sweet wines often demonstrate intense flavors of apricot, raisin and even a nutty characteristic. The wines generally have a good body weight that can be characterized as a little oily.
