Beef or Pork Tenderloin Roasted, grilled, barbequed styles, creamy sauces add a good bridge The bold flavor and tannins pair to the big body of beef or pork tenderloin. Use of a creamy sauce, like a blue cheese sauce, is a bridge.
Lamb Most cooking styles The sweetness of lamb matches the spiciness and fruit in the wine. Use mint as a further bridge.
Beef Steaks and Hambrugers Barbequed or Grilled The bold body of the red meat combined with the charcoal flavors bridge to the wine's oak and tannin.
Cheeses Dry/Strong cheeses The bite of the cheese with its high fat helps to soften the tannins of the wine and allow the fruitiness to come out.
Venison Grilled or barbequed The big, spicy quality of the meat with the boldness of the wine make for a classic pairing, especially if the meat is marinated in wine sauce first.
Mexican Food, meat or bean based Somewhat Spicy, Red salsa style The fruitiness and apparent sweetness of the wine can soften the spice. Be careful that the wine isn't overly tannic.
Fruit: This is a wine known for its big fruit and bold character. The most common fruit is plums, blackberries and black cherries. Wines from cooler regions can often exhibit an impression of sour red fruit. Non-Fruit: Black pepper, coffee, smoke, caramel, licorice, mocha, cloves and leather. Spiciness is one of the most common descriptors used for this wine.

Other Notes: Petite Sirah is a big, very bold wine that tends toward higher tannins. This is one of the few wines that can often be identified by just looking at its beautiful deep black/purple color (often described as inky) and the incredibly deeply colored legs it leaves on the side of the glass after swirling.
